Healthy, Fresh, Easy-To-Make Meals: Mushroom Soup Recipe

Let’s talk food! My love for mushrooms is long and deep. I like to think I could live off sauteed mushrooms if needed. So it’s not surprising that one of my favorite dishes at the gorgeous, all-inclusive, luxury hotel Casa de Mita in Punta De Mita, Mexico is a mushroom soup that leaves me wanting more! The flavors are rich, the texture creamy; I want to literally jump in the soup bowl. If I wasn’t in public I would’ve licked the bowl clean. (I used my fingers instead; sorry, Mom!) Typically, this mushroom soup recipe calls for cream, but knowing I’m vegan the talented Chef Gonzalo adjusted the recipe, and it turned out just as good! I’m sharing it with y’all because it’s not only easy AND delicious, but it’s healthy: vegan, gluten-free, sugar-free. Only a handful of ingredients and cooking steps. Get going…just in time for the holidays! The mushroom soup recipe is as follows:

INGREDIENTS for Mushroom Soup Recipe (serves 6):
4 Cups Crimini Mushrooms
1 Onion
8 Cups (2 Liters) Water or Chicken Stock (your choice)
1 Cup Jerez Wine (sherry wine that is super dry and has a similar taste to mushrooms)
2 Garlic Clove
1 Tablespoon Minced Garlic
1 Tablespoon Himalayan Sea Salt

DIRECTIONS for Mushroom Soup Recipe:
(Prep Time 10 minutes + 45 minutes total to cook)
1. Cut end of mushroom stems off each
2. Wash mushrooms in water thoroughly
3. Cut onion and garlic cloves in small pieces
4. Heat 2 tablespoons of olive oil in a pot

5. Saute onion for 1 minute
6. Add in garlic cloves and saute 1 more minute
7. Add 1 cup Jerez wine to pot
8. With a match light the contents to flame and burn off and sweeten the alcohol for 1 minute
9. Add mushrooms and cook for 1 minute

10. Add 1 tablespoon Himalayan sea salt and let the pot cook for 1 minute
11. Add 8 cups water

13. Add contents carefully to high-speed blender
14. Garnish with your choice of fresh cilantro and/or swiss cheese
15. Let the soup boil for 10 minutes and then cook slowly for 20 minutes
16. Dig in!
